Itβs the perfect Spring day for a simple Spring salad recipe, with ALL the colours.
ingredients:
- Cooked chicken
- Carrot, chopped
- Beetroot, chopped
- Pumpkin, chopped
- Spinach leaves
- Red onion, sliced
- Asparagus, chopped
- Radish, sliced
- Cherry tomatoes, halved
- Avocado, chopped
method
- Place carrot, beetroot and pumpkin on roasting tray, drizzle lightly with olive oil, sprinke with sea salt or pink salt, and roast till softened and lightly golden.
- Blanch asparagus for 30 seconds in boiling water
- Lay spinach leaves on plate, top with raw salad vegetables, asparagus, avocado, roast vegetables and cooked chicken.
- Drizzle with extra olive oil and lemon juice.
