This is one of those easy but so flavoursome recipes you’ll go back to time after time, so store this one in the recipe book!

This marinade is a sure fire way to spice up to what otherwise can be another meal of boring chicken.


🔸 Ingredients:

(enough for 3kg chicken)

o 5 cloves garlic

o 1 tbsp Dijon mustard

o 1/3 cup lemon juice

o ½ tbsp pink or sea salt

o ½ tbsp pepper

o ¼ tsp saffron threads

o 1 tbsp tomato paste

o ½ tbsp chopped oregano

o 2 tbsp olive oil 🔸 Method:

Blend well all ingredients in a food processor or thermomix. Ideally cover the chicken with the marinade and place in the fridge for a couple of hours for ultimate flavour, but if you don’t have the time it still works out well. Coat the chicken in the marinade and cook in a pan over medium heat, turning once, until the chicken is cooked through.
