This low calorie pasta will be your new favorite for a delicious, (extremely) quick and even easier meal!
INGREDIENTS: Serves 2
- 300g chicken breast
- A good few handful of spinach and basil
- Garlic (measure with your heart)
- 2/3 Avocado
- Handful of cherry tomatoes, halved
- 100g Keep it Cleaner Green Pea Pasta (or pasta of choice)
METHOD:
- Start by poaching your chicken breast in a large pot of boiling water.
- Leave your pasta to cook in a (separate) pot.
- In a blender, add the basil, garlic, spinach and avocado. You may need a tiny amount of oil or water to allow to blend easier.
- Once the chicken is cooked, cut it up into pieces.
- Drain your pasta, add chicken and green sauce to pot. Return to light eat for a couple of minutes – occasionally stirring. Just before finished add the cherry tomatoes and a tad more spinach.
Voila – As quick and easy as that!
