🍜If you’re anything like me, you’re always on the lookout for quick, tasty dinners that keep your time in the kitchen to a minimum during the week, BUT are healthy and ticking all the boxes. This stir-fry is one of those.
✴️INGREDIENTS:
- 1 brown onion, chopped
- 1 tbsp coconut oil
- 1kg beef stir fry meat or rump, cut into 3cm pieces
- 200g broccoli
- 120g button mushrooms
- 170g carrots, cut into batons
- 200g zucchini, cut into batons
- 120g red capsicum, chopped
- 130g snow peas, trimmed and halved
- 100g bean shoots
- 200g Chinese broccoli or any Asian greens
- 3 cloves garlic, crushed
- 1/2 tbsp grated ginger
- 100mL tamari
- 1 tbsp fish sauce
✴️ METHOD:
➡️Melt half the coconut oil in a large fry pan 🥘over high heat. Saute the beef until just brown. Transfer to a bowl. Add remaining coconut oil and brown the other half of the meat and add to bowl.
➡️Reduce heat to low-med, and add the onion 🧅, garlic 🧄and ginger to the pan, stir-frying for 1-2 minutes. Add the rest of the vegetables except for the Chinese broccoli and stir-fry until they reach your preferred level of ‘crunch’.
➡️Return the beef to the pan, add the Chinese broccoli 🥬, tamari and fish sauce, mix together well and cook for a further minute. Season with salt and pepper.
➡️Serve with your choice of rice or noodles if you wish, and top with additional fresh bean shoots. 🍜😋
