Such beautiful flavour in this curry, packed with veg, it makes a complete, healthy meal.

1.2kg diced beef (chuck, round or casserole beef)
1 tbsp olive oil
4 tbsp Massman curry powder (CANNOT go past Herbieβs)
4 tbsp coconut milk
2 cups lite coconut milk
2 cups chicken stock
220g pumpkin, cut into cubes
200g zucchini, diced
150g red capsicum, chopped
150g broccoli, cut into florets
150g mushrooms, sliced
50g baby spinach
π π²ππ΅πΌπ±:
Heat oil, add beef in two batches and brown. Remove and place in bowl.
Add 4 tbsp coconut milk and Massaman curry powder to pan, mix well, add more coconut milk to a paste if needed and heat one minute. Add beef and juices, coconut milk, stock and place in 165 degree oven for 90 minutes.
Remove from oven, and simmer uncovered over low-medium heat on stove for a further 30 minutes. During the last 20 minutes of cooking time add diced pumpkin, add remaining vegetables for the last 10 minutes, excluding spinach.
Remove from heat, stir through spinach and serve with your choice of rice or cauliflower rice. Top with fresh coriander if desired.
This curry really is a simple dish to make, the only βworkβ is in browning the meat and chopping the veg. You really just need the time to leave in the oven for a while, so the perfect dish to create while youβre home on weekends.
